Jom makan nasik ayam

Daddy invited his colleague for dinner at our house last night. At first I was thinking..what am I gonna cook since its going to be just 1 guest. Then suddenly I thought about this great chicken rice that I've tried before. Got the recipe from kuali.com and its very nice. Its also easy to prepare. I also made some pannacota for dessert. I got the recipe from myresipi.com, posted by Yani. To Yani, thanks so much for sharing this delicious recipe. So, here are the recipes in case anybody would like to give it a try...I really2x recommend the pannacota..Mmg sedap betoiiiiii..

Ingredients
For the rice
3 cups (600g) Thai fragrant long grain rice (I used normal rice)
2 tbsp chicken skin with fat
2 tbsp water
2 cm piece ginger ~ smash lightly
2 cloves garlic ~ smash lightly
1–2 tsp salt or to taste
3½ cups or enough reserved chicken stock
OR
water with 1 tbsp chicken stock powder added to it
2 screwpine leaves ~ shredded and knotted

Pak Cham Kai (Chicken steeped in stock)
1 whole chicken
Enough water ~ for boiling
1 thumb-sized piece of ginger ~ crushed
4–5 cloves garlic ~ smash lightly
1 tsp salt

Chilli garlic sauce
10 fresh red chillies (I just used 2, tak tahan pedas.. )
2 cm piece ginger
4 cloves garlic
1/4 tsp salt
2 calamansi limes ~ take the juice
2 tbsp reserved chicken stock
Blend everything in an electric blender. Adjust seasoning by adding salt and sugar to taste. Serve immediately or store in a sealed jar until required.

Ginger sauce
75 g ginger (I used 40 g only)
6 cloves garlic (I used 4 cloves)
1/2 tsp salt
2 calamansi limes ~ take the juice
2 tbsp reserved chicken stock
1½ tbsp garlic oil (I omit this)
1½ tsp sesame oil
5 tbsp light soy sauce
1½ tbsp sugar or to taste
3 tbsp water
Blend everything in an electric blender. Serve immediately or store in a sealed jar until required.

Method
Chicken Rice
1. Wash the rice in several changes of water until the water runs clean and clear.
2. Heat wok and add chicken fat and 2 tablespoons water. Bring to a low simmering boil until oil is released from the fat.
3. Add ginger, garlic and fry well. Remove and discard the chicken fat then add in rice and salt to mix. Stir fry briskly for 1–2 minutes.
4. Transfer all the ingredients into an electric rice pot.
What I did was, I stir fry the ginger & garlic and transfer it directly into the rice pot (version pemalas, ) But my chinese friend said if we fry the rice together with the ginger & garlic for a while, it will give a nice aroma to it.
5. Add water or chicken stock and screwpine leaves. Cook until rice turns dry and fluffy. Stir through just before serving.

Chicken
1. Bring enough water to boil in a large pot. Put the chicken into the pot. Lower the heat and cook for 10–15 minutes uncovered. Turn off the flame and cover the pot. Allow the chicken to cook for 20–25 minutes.
2. Remove the chicken from the pot and immerse it in a basin of cold water for 5–6 minutes.
3. Take the chicken out of the basin of cold water and drain on a colander to dip dry before cutting up into serving pieces.
What I did was, since my hubby likes his chicken to be fried, I marinate the chicken with a bit of sesame oil, oyster sauce and light soya sauce after step number 3. Since the chicken is already cooked, I fry it for just 3-4 minutes. Sedap jugak. But, its up to your liking.
4. Arrange in a serving plate and garnish with spring onion and coriander leaves and cucumber slices (I just used cucumber, salad and tomato to garnish it).

Ingredients
½ cup fresh milk
1 cup fresh cream
20 g palm sugar or gula melaka
7 g gelatin powder mix with ¼ water (don't forget to use halal gelatin, jgn beli sebarang)
For the syrup
40 g palm sugar
¼ cup water

Method
1. Put in fresh milk, fresh cream & palm sugar into a pot. Stir and bring to the boil. Once boiled, remove from heat.
2. Put in the gelatin mixture & stir until the gelatin dissolves.
3. Put in some ice cubes & cold water into a suitable dish.
4. Put a bowl on top of the ice cubes & pour the pudding mixture into the bowl. Stir until the mixture is cooled.
5. Transfer into 4 small cups or ramekins & refrigerate for 1 hour. The pudding will set by then.
6. To prepare the syrup, dissolve the palm sugar in the water & pour onto the cold pudding.

alahai sedapnya....nasi ayam hainan ni mmg sedap. kat wangsa maju ada satu yang best....kalau kat pantai batu buruk pun ada satu gerai tu best gak...... tapi yang kat atas tu lagi sodap Tue 13-Feb-2007 02:09
