Kenduri Doa Selamat

On 9/12/06, we held a kenduri doa selamat and yassin at our house. We made Nasi Kerabu with Ayam Percik & Pulut Kuning with Rendang Daging. I used the recipe by Kak Hanieliza for the Pulut Kuning and buat rendang daging by using perencah Adabi..hehehe..rendang daging segera ..Tapi sedap jgk..To Kak Hanieliza, thanx a lot for the recipe..really appreciate it..

And here is the recipe of the Nasi Kerabu and Ayam Percik in case ada org nk try. The nasi kerabu's recipe I got from my sis-in-law yg memang pakar dlm bab masak memasak nie.. . Its a traditional Kelantan delicacy. Hubby's favourite . Ayam percik tu resepi combine2 from internet & magazine.

Yellow Rice
Rice
Yellow coloring or turmeric powder (I used turmeric powder)
Pandan leaves ~ tied into a knot
Kaffir lime leaves or "daun limau purut"
Lemon grass ~ pounded (dititik)
Cook the rice together with all the ingredients
Grated Coconut Sambal
Grated coconut ~ fried & pounded (kalau susah cari freshnya kelapa parut, pakai dessicated coconut pun boleh & I just blend my kelapa goreng.. )
Grilled fish ~ remove the bones & pounded
Shallots
Lemon grass
Black peppercorn ~ crushed
Palm sugar or gula melaka
Salt to taste
Blend all the above ingredients and mix it with the coconut. Set aside.
Gravy
Thick coconut milk
Dried chillies (depends on tahap kepedasan masing2)
Shallots
Lemon grass
Dried shrimps
A few drops of anchovy sauce or budu (kalau xde budu, ganti dgn sikit garam)
Palm sugar or gula melaka
Tamarind skin or asam keping
Blend all the ingredients together except for the coconut milk & tamarind skin. Cook the coconut milk over low fire until [i]"naik minyak". Then put the blended ingredients & tamarind skin into the coconut milk and cook for about 20-30 minutes over low fire.
The gravy can be prepared one day in advance.[/i]
Ulam-ulam
Typical ulam will include cucumber, long beans, eansprouts, laksa leaf or daun kesom & pink ginger or bunga kantan. But here I used carrots, cabbage, cucumber & long beans. Shred and cut the vegetables into small pieces.
How to eat
Put the ulam-ulam on top of the rice. Sprinkle some of the sambal kelapa, put some gravy and top up with a little bit of budu sauce. Kalau nak tambah ummpphh lagi, hancurkan keropok goreng and gaul skali dgn nasik...
Boleh dimakan bersama ayam percik, ayam bakar, ikan bakar/percik or daging bakar.

Ingredients
3 chicken ~ cut into 8 or 12 pcs per chicken
6 stalks lemon grass ~ blended
4 inch ginger ~ blended
9 cloves garlic ~ blended
10 shallots ~ blended
3 pcs dried chillies ~ blended (kalau nk kuah merah, tambah lagi)
2 cups tamarind juice
3 cups thick coconut milk
Salt & sugar to taste
Method
1. Clean the chicken and bake in the oven for about 20 minutes at 150 deg C or half cooked. Set aside.
2. Heat the oil in a saucepan and saute all the blended ingredients until fragrant and dry.
3. Pour in the tamarind juice and coconut milk and bring to a boil. The gravy needs to be constantly stirred.
4. Add in salt & sugar to taste.
5. Simmer the gravy until thick.
6. Pour half of the gravy over the chicken and bake in the oven until cooked.
7. Pour the other half of the gravy over the chicken before serving. |
